Ostara is knocking, and it’s not bringing flowers – it’s bringing eggs, and we’re about to turn them into something awesome. Enter the Scotch Egg: the portable, protein-packed powerhouse about to become your favorite Ostara tradition. If you think making these is as complicated as your last Tarot reading, think again. We’re keeping it simple, fun, and downright delicious.

Ingredients

  • 1lb sausage
  • 1 teaspoon dried minced onion
  • 1 teaspoon salt
  • 4 soft-cooked eggs, peeled
  • 3/4 cup panko bread crumbs
  • 1 egg, beaten

Instructions

  1. Heat oven to 400°F.
  2. Mix pork sausage, onion, and salt in a large bowl.
  3. Shape the mixture into four equal patties.
  4. Place a peeled, soft-boiled egg on each sausage patty and shape the sausage around the egg.
  5. Dip each into the beaten egg; coat with bread crumbs to cover completely.
  6. Place eggs on an ungreased cookie sheet.
  7. Bake for 35 minutes or until sausage is thoroughly cooked and no longer pink near the egg.
